Bread Upma

For 6 Persons:
  • 20 slices bread
  • 1 tbsp. cooking oil
  • 1 tsp mustard seed
  • 1 tsp cumin seeds
  • 1 tbsp. urad dal
  • 1 tbsp. Chana dal
  • 1/4 tsp asafetida
  • 4-5 pieces curry leaves
  • 1 onion finely chopped
  • 2 green chilly minced
  • 1 carrot chopped or grated
  • 1-2 tomatoes chopped
  • Salt
  • 1 tsp turmeric powder
  • 2-3 tbsp. coriander leaves
  • 1 tbsp. lime juice

Instructions:

  1. Prep the bread using any of these methods – Tear bread slices randomly with your hands, Cut them evenly in 1-inch squares or Pulse them in the grinder to resemble crumbs.
  2. Once the bread is ready, chop the veggies and then start making bread upma..
  3. In a pan, heat oil. Temper mustard seeds and cumin seeds. Once they crackle, add urad dal, chana dal, and asafetida.
  4. Add chopped onions and minced green chilies. Sauté till they turn translucent.
  5. Then add chopped carrots. Continue to sauté for 4-5 minutes or till they are cooked.
  6. Next, add chopped tomatoes along with salt. Cook till they turn soft.
  7. Once the tomatoes are cooked, add turmeric powder and sauté for thirty seconds.
  8. Then add the bread pieces and salt. Mix it together with the spices and cook for 2-3 minutes.
  9. Garnish with chopped coriander and lime juice. Take it off the flame and serve warm.

Notes:

  • You can use whatever kind of bread you have for this recipe. Leftover or stale bread works best.
  • Some like to toast the bread a little before cutting them. You can do that as well, especially if using a non-white bread.
  • Add peanuts and cashews along with lentils to give this snack a nice crunch. You can also add curry leaves in you have.
  • Cook it in ghee, (regular or dairy-free) butter for an aromatic flavor or simply use regular vegetable oil.
  • To make this vegan bread recipe gluten-free, skip adding asafoetida.
  • Feel free to add more veggies like green peas, sweet corn, green beans, or bell pepper to make this vegan bread recipe more wholesome.
  • For more flavor, add 1-2 tbsp of Sambhar Powder, tomato ketchup, or Pav Bhaji Masala along with turmeric.
  • You can make this bread poha ahead of time. It stays well in the fridge for 1-2 days. Reheat and serve.
